Pasta
1 stick plus 2 Tbsp. butter
2 Tbsp olive oil
1 medium onion, diced
1 green bell pepper, diced
1 Tbsp minced garlic
6 green onions (white and green parts),
sliced
16 ounces sliced mushrooms
¼ tsp salt
¼ tsp black pepper
2 pounds boneless skinless chicken breast,
cubed
1 pound smoked sausage, sliced
Cajun seasoning to taste
32 ounces of your choice of pasta (I like to
use different pastas with a variety of colors to make for a pretty
presentation).
Bring a large stock pot full of
salted water to boil. Add pasta and cook according to package directions. Drain
and return to stock pot; toss with 2 Tbsp butter and set aside.
Melt remaining butter in a large skillet; add
olive oil. On medium heat add onions,
garlic, bell pepper, mushroom, salt and pepper; sauté until all vegetables are
tender. Remove vegetables and set aside. Add chicken and sausage and cook until
the chicken is cooked thoroughly.
Combine pasta, chicken, sausage,
and vegetables to a large serving bowl; sprinkle with Cajun seasoning to taste;
stir thoroughly to incorporate all ingredients. Enjoy!
Servings: 8-10 Dinner Servings or
Approximately 20-25 Party/Reception Servings
