Country Chicken and Dumplings

Well, the verdict is in...the new "chicken 'n dumplin" recipe was delicious! I tweaked it a little. You know I can't help myself!



Country Chicken and Dumplings
3-3 1/2 whole fryer
2 quarts water
1 tsp salt
1/4 tsp Italian seasoning
1/4 tsp thyme
1/4 tsp black pepper

Dumplings:
2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 cup butter, softened

Place chicken and seasonings in dutch oven or large stock pot; add water. Bring to a boil; cover, reduce heat, and simmer for 1 hour or until chicken is tender.

Remove chicken from broth and cool. Bone chicken and cut into bite size pieces; set aside and reserve 3/4 cup of broth.

Combine flour, baking powder, and salt. Cut in butter until the mixture is crumbly. Add the 3/4 cup of reserved broth. stirring until all the ingredients are moistened. Do not over mix. Place dough on a well floured surface and pat dough to a 1/2 " thickness. Cut dough in 4x 1/2" pieces and sprinkle with additional flour to coat.

Bring broth to a boil. Drop dumplings one piece at a time into broth. Gently stir after each addition. Reduce heat to low. Cover and cook for 8-10 minutes. Stir in chopped chicken and serve immediately.

Yield: 4 servings
